
Authentic Punjabi Chole
Well this dish is hard to ignore, it is everywhere be it kulchas, bhature, tikki, Samosas and much more all are incomplete without them. Super popular! Known for itsscrumptious flavour and tanginess. Today wewill be sharing a traditional chole recipe, this is my grandmother’s recipe.
Ingredients:-
- 500 gm Kabuli channa(soaked overnight)
- 3 tbsp oil
- 1tsp cumin seeds
- 3 chopped medium onions
- 8 to 10 garlic cloves
- 1 inch chopped ginger
- 2 green chilli
- 3 medium sized tomatoes
- 1/2 tsp Sainik turmeric powder
- 1 tbsp Sainik red chilly powder
- 1 tbsp Sainik Coriander powder
- 3 tbsp Sainik Channa Masala powder
- 1tsp Sainik Garam Masala powder
- Handcrushed 1 tbsp dried kasuri methi
Method
- Pressure cook soaked kabuli chana with a pinch of salt
- Add oil in a kadhai
- Add cumin seeds sauté for 10 seconds
- Add chopped onions and sauté until transparent
- Add ginger, garlic and green chill. Sauté for 4-5 mins
- Add chopped tomatoes with half cup water cover and sauté for another 10 minutes
- Turn off the flame and grind the masala into a fine paste
- In the same kadai add a tbsp of ghee and add the masala paste
- Add turmeric, coriander, red chilly, channa masala, garam masala, hand crushed kasuri methi, salt as per taste and garam masala to the paste
- Sauté for another 5 minutes
- Meanwhile mash half cup of boiled chole
- Add mashed chole to the masala and cook for 5 minutes
- Now add the rest chole and water as per requirement
- Cook for 5 mins, turn off the flame and garnish with coriander
