
Highway Chicken Curry
Rustic, flavourful and World Famous. The heart of highways of punjab, this kukkad dish has a separate fan base. Recreate the dhaba flavour at your home.
Ingredients:-
500 gms chicken curry cut
5 thinly sliced medium onions
2 tbsp Oil
2 tbsp Ghee
1 inch sainik cinnamon
2-3sainik whole black peppercorns
1 sanik Green elachi
1 sainik black elachi (Seeds removed)
2-3 Sainik Cloves
1 1/2 tbsp fresh ginger garlic paste
Salt to taste
1/2 tsp Sainik turmeric powder
1 1/2 tbsp Sainik coriander powder
1 1/2 tbsp Sainik Kashmiri mirch
1/2 tbsp Sainik Red chilly powder
2 tbsp Sainik chicken masala powder
1 tsp Sainik Garam Masala
Hand crushed Sainik kasuri methi
Lukewarm water or chicken stock
Method
- Heat a Pressure cooker
- Add Oil and ghee, add Cinnamon, black peppercorns, green Elaichi, break and remove seeds of black Elaichi and cloves
- Add sliced onion mix well, add a pinch of salt and cook until golden brown
- Add ginger-garlic paste with 2 tsp luke warm water and sauté for 1-2 minutes
- Add turmeric, coriander powder, kashmiri mirch, lal mirch and chicken masala
- Sauté each powder spices with a gap of 30 seconds and add luke warm water if the masala sticks
- Add 2-3 tbsp of luke warm water and Salt as per taste, sauté for 1-2 mins
- Turn off the flame and cover pressure cooker for 2-4 mins
- Turn on the flame add chicken and sauté for 3-5 minutes
- Add water as per requirement and add garam masala
- Pressure cook until the meat is tender
- Add hand crushed dried kasuri methi and cook for 1 min
- Transfer it into a serving bowl garnish with coriander
